A note from the harvest
A year that knew how to test our patience.
It was a year that knew how to test patience. May brought frost just when we thought winter was over, and over two mornings the cherry orchard lost a third of its bloom.
Then came that rain at the end of June which, in 48 hours, saved what remained. And when the harvest began, the fruit was smaller — but denser. Not every year is like this. This one was.
We distill slowly. There is no sense in rushing what nature worked on all year.
